I think draw it out and see how many peices u need and what size they should be and then it's just a matter of "gluing' them together

That is my problem i make the cookies first off and they do not look like this. they are light in color and puffy and not strait. then i put them together and they fall apart. i know that is because i am not letting it dry enough before i put on other pieces so i have that down but my cookies dont look like this. why?

Are you using a gingerbread dough for building houses or one for eating?
