So I made IMBC last night for the first time and loved the taste. DH didn't care for it but he is not much of a butter person. Is there any way to get the color more white short of buying butter in a health food/natural foods store without the dyes? I used a whole little bottle of Americolor super white and it did nothing!

When I make the IMBC I substitute shortening for some of the butter and it helps with the color. It also makes it a bit cheaper for me because I buy the hi ratio in bulk.

I have some hi-ratio. How much do you subsitute? I wanted to try this ( I read about substituting hi-ratio for warm weather). Does it change the taste? My dh thought I had made all crisco bc!! It didn't taste anything like that to me but I am the gal who will eat butter straight from the stick icon_eek.gif

how much butter is in your recipe? It changes the taste but only a little. You could add a bit of butter flavoring if you wanted, but I don't.

I used Martha's which is 1 lb.

I would sub in 1/4 to 1/2 a pound. I would lean to subbing in half and if you don't like it try with just 1/4. It will be a personal taste thing....if you sub 1/2 and don't like it maybe you can use it for decorations or borders so it won't go to waste.

Thanks Berta! I'll have to try it! I have to do a tasting in a couple of weeks for some friends who are getting married so I'll try it out before then!
