Hi just wanted to find out from those who have done it....should the candy be scored when still slightly soft? How deep of a score do you need to put on it for the pieces to break apart neatly.

Score while it's hard and go about half way or a little deeper.

When I did my mosiac cake I just took the cookie sheet with cooled, hard candy and slammed it on the counter a few times. It was fun to make a design from what was there. The pieces broke apart cleanly but not in uniform shapes.
