Help - Trying To Make Gumpaste For The 1St Time!

Once again I need your help. I am attempting to make gumpaste. I thought it might be fun to try my hand a making a few figures for Christmas.

I followed the Gum Paste Recipe on the can of Wilton Gum-Tex. I used 3 cups of sugar as the recipe indicated. (I didn't sift). I would say I had about 1 cup of the sugar that would not mix in. The ball I ended up with feels somewhat dry. I'm not sure what the texture should be? I have put the mixture in a plastic bag to sit overnight. The directions say, tomorrow I should knead until it's pliable and non-sticky. WELL--- It's definitely non-sticky already. Am I doing something wrong? Please HELP! I'm just not sure what I should expect.

Hi!

I don't know if you made something wrong or not but I only tried once to do from wilton gum-tex and never again. i just didn't like te feeling of that thing. maybe i did something wrong myself but it just didn't work for me.


i have a very simple recepie and worked great. for the flowers i tried to do.

1 teaspoon of gum tragan... (i don't know how to spell it) sorry
3 tablespoons of water
1 tablespoon of glycose
around 300 grams of icingsugar. (approximately 1,5 cup) put little less in the beginning and if you need more you can always add.

put glycose in the water and let it dissolve in there.
in a big bowl shift together gum t, and sugar add the water with glycose to it and knead til it is not sticky.

The funny thing is that I was researching gumpaste today as I tried the Wilton one a while ago and didn't like it either. I did find a recipe that peacockplace had posted and another member had tried and really liked. Here is that recipe:


I found a recipe in one of my cake books and it is made with 1package gelatin, 1/4 cup water, 1tablespoon light corn syrup, 1pound powdered sugar.

1.In a saucepan stir geletin and water and allow mixture to bloom for three min.

2. Stir in corn syrup. Heat on med. until geletin is completely dissolved, stirring constantly.

3. In a mixing bowl, alternate geletin mixture with powdered sugar and mix until stiff.

This is from Cake Decorating for the First time. Recipe for gumpaste.




I was going to try it tonite and see if I liked it. It doesn't call for any of that gum stuff or tylose so I'm not too sure.

I use CK product. It is Gumpaste in a bag. I like it.

I want to say the directions on the gumpaste thing is wrong, but I could be wrong.

I asked about gumpaste recipes recently and recieved several to try out. The post is in the recipe section, you may want to check it out. icon_smile.gif

Thanks for the responses and suggestions. Triplemom, if you decide to try the recipe tonight, let us know how it turns out!

I was a little confused when making the Wilton gumpaste. The directions on the Gum-Tex, and the directions on the Glucose are a little different and I wasn't sure which one to follow. I will see tomorrow how what I made has turned out, but I don't have high hopes. I don't even like the way it smells!

TS, I think you are right. After looking more closely as the recipe it appears that it is more of a pastillage recipe as opposed to gumpaste...not that I know the difference! icon_confused.gif

I think that if there is no gum trag.. in the paste it really is not gumpaste because it will not dry hard fast.

Nicholas Lodge's is really easy to make and is wonderful to work with..It's basically royal icing with Tylose mixed in. If you go to www.nicholaslodge.com you can find the recipe on his site.

Okay I found what I thought I had read. This is from the WMI board posted by an Instructor that had problems with the Wilton Gumpaste Mix and called their customer service. She was told the directions were wrong, and here are the new ones.

Gum Paste Mix in The Can Instructions As of Sept 2005
>
>In large bowl, add mix and make a well in center
>Add 1 Tbsp of Gum Tex and 3 Cups of 10X Sugar
>
>In Glass measuring cup add
>4 Tbsps of Warm water
>1 Heaping Tbsp of Glucose
>Heat on high in microwave for 30 seconds until clear.
>Add mix to center of well in bowl. Knead mixture
>together till it comes together. If still
>semi-stickly or dry then coat with shortening. Keep
>mix covered at all times.

Thanks for the updated instructions. That explains the problem. I added 1 heaping tsp. of Glucose instead of a heaping Tbsp.
