How Long Can A Fbct Be In The Freezer?

I was just wondering. I'm making a cake next week, and wanted to try to do the FBCT (which is fairly difficult because of the detail) in advance, so that if I mess up, I have a good cushion of time before the cake has to be done. I've read 24 hours? Is this uncovered? I was just wondering, if I let it set (I always let it set for 20-24 hours) can I then wrap it in saran wrap and foil or something? I've never attempted this so any advice on how to store, etc is greatly appreciated! THANK YOU!!

I made a practice FBCT and left it in the freezer for several weeks and it did just fine (however, I didn't use it on a cake). I would think you could wrap it really good or put it in a large freezer bag and it should be fine... It doesn't hurt to freeze your icing, and this is icing so>>>I would give it a try.

Just make sure you wrap it well and then place in a freezer bag or container to prevent yucky smells or freezer burn taste from happening. I have left mine in the freezer for 1-2 weeks and it tasted the same as the fresh icing on the cake

I read somewhere that if you freeze the transfer too long, then the colors may run after thawing. I've never run into this problem yet but was wondering if anyone had? I'm still a fairly newbie at this technique and haven't frozen them all that long.

As an aside, this may sound stupid but do you take them off the board/glass and freeze them in saran wrap, or do you leave them on there? icon_confused.gif

I take them off the board, put another piece of parchment over the top or bottom, whichever way you are going to freeze it, so there is a piece on top and on the bottom, then I put the whole thing in a freezer bag and freeze. So far the longest I have done this for is two weeks with no problemo! Make sure it is flat in the freezer though, put a piece of carboard under it in the bag or freeze the bag on top of a baking sheet or something, so that it stays flat.
