My First Mmf

Well, I finally got around to making MMF. Boy, I sure wish I had an KA!! My little handheld mixer wasn't able to mix in half of the powdered sugar. I would increase the speed then have powdered sugar flying everywhere. So then I started mixing the stuff by hand. IT WAS SO MESSY!! It took me about 40 minutes to completely finish kneading in the powdered sugar...So far it was all worth it though! I really like the taste of MMF. A bit sweet but good. I can't wait to use it tomorrow! Thanks for reading!

After reading your post I am going to have to give MMF another try.

I am MMF challenged. icon_redface.gif

I did not know that MM expand when heated and I had MM all over my microwave...... I was so tired of cleaning MM out of the microwave's vents and my door sticking I finally threw it out and purchased a new one. Now I am scared. icon_surprised.gif

I will give it another try since I keep reading so many good post about it.
Glad yours turned out good. Oh and I LOVE my KA. I actually thought about taking it with me when we left for Hurricane Katrina. Pictures or KA? Pictures or KA? My husband helped me decide........ the KA stayed. icon_lol.gif

Yeah! I love the taste of MMF. I like using it because you can add any flavor you want. Ooohhh! Have you try "Chocolate MMF"? It has a delicious taste. And it smells fantastic! Yummy!! icon_biggrin.gif

You can make mmf with out a mixer, I never use a mixer. I have a large bowl that I heat the mm in, and then I mix the sugar up in the same bowl. I mix as mush as I can in the bowl then I turn it out on the table and knead in the rest of the sugar. I have had good success doing it this way.

I tried to make MMF yesteday and got so frustrated! I ended up with strings of MM all over me, the KA, the counter, and anything else I touched. My 6qt KA couldn't even handle it. I had to try to knead in the powdered sugar with my hands and thought my arms would fall off. I still never got the full 2lbs worked into it. I can't imagine how this stuff will be to roll out.

I was getting a bit frustrated getting melted marshmallows over everything too! My hands looked like something out of Swamp Thing! I had to ask my sister to sift the second half of the powdered sugar for me, she did it right over my hands in the bowl. I read that most people don't use the full 2 lbs. of powdered sugar. I have about 1 1/2 cups left.

Today I've got a tightly wrapped white brick on my counter. I sure hope that microwave method softens this thing. Anyone know where I can get other homemade fondant recipes? I need something to work with for next weekend and I do not want to use Wilton.

Homemade Fondant

Ingredients:

2# powder sugar.
1 Tablespoon gelatin.
1/4 cup cold water.
1/2 cup corn syrup or glucose.
1 1/2 Tablespoon glycerine.
1 teaspoon flavoring (extract).

Preparation:

Sift the sugar into a large bowl. Make a well in the middle.

Sprinkle the gelatin over the water, let stand for 5 min. Heat until gelatin dissolves. DO NOT BOIL.

Add corn syrup, glycerine & flavoring to gelatin, mix well.
Stir into powdered sugar until combined, then knead until stiff.

Wrap in plastic wrap & store in an airtight container. Let stand 8 hrs, especially if humid.

Thanks so much, I will definitely try it. For the gelatin, you just use something like Knox unflavored gelating right?
