I have a request for a CMD Turtle cake. I have fixed this cake twice before and served it straight out of my glass 9x13. My question is because this is for a client --- How do I get it out of the pan?? Because of the carmel and choc. it sticks to the sides some, and it is really heavy. I can't flip it out on a board because it would be upside down.
Can I line my 9x13 as best I can with parchment and lift it out?

I would think that if you lined your pan with parchment it would be fine. It should just peel right off.

Could you find a cheap pan at the dollar store? The you can just include the pan...

I'm not familiar with this cake (been trying to get a copy of CMD I ordered on-line since Aug-long story!) but if it's heavy and you try the parchment paper you may need another set of hands to help you get it to the board safely!

Thanks everyone! I am going to try the parchment, just not quite sure how to go about getting the parchment off after I get it out of the pan. I will let you know.

It is a great recipe by the way.

I'd try chilling the cake for a while...things become less sticky then

I think I would leave the parchment on and just transfer the whole thing to a cake board and trim down the parchment at the sides, otherwise this will be hard to remove. You can get rectangular springforms, I am not sure which sizes they go up to, but you could put the foil covered cake board right in the pan when it is baking and then you wouldn't have any worries, you need to insure that the board is the same size as the pan. I haven't tried this with a glass dish though, but if the cake board was completely enclosed in foil, it shouldn't make much difference since this method works in a springform pan.

Thanks Lisa, when it was mentioned being a problem to order from online, I was confused as to whether it was one of those sites you order recipes from for a price, haha!

They do have pans for $1. It's a good idea. I buy the pizza pans and use them as cake boards.

Yes, the disposable pans or cheap pan would be a good idea!

You guys crack me up! Cake is in the final stages now! Looks great! I am not even going to attempt to remove it from the pan until tommorrow am after it has cooled well and set up.

Good luck kiddo and remember you can always leave it in the pan and request the pan back, many people do this and it isn't unprofessional, sometimes it is just safer. Hey, we are home bakers going for homemade goodness, this makes it a bit homier!

I had ordered CMD and Everyday Italian Cookbook (love Giada Delorentis-(sp?) on Food Network) and they were due to arrive the day Katrina hit so I finally went back to the company, they tried to trace it, of course couldn't locate the shipment and resent it out to me only dummy me somehow changed my address but left my old New Orleans zip so Lord only knows where the poor books will land and when I'll ever get them!!

Turtle cake update--
I lined my pan with parchment, baked cake, and let it cool over night.

This am I put the whole thing in the freezer. The last time I made this cake my DH was out of town and he would kill me if he didn't get a piece so I froze it. It froze well and was really good. I got to thinking about that last night and decided to try it.

When it was frozen solid, it lifted right out of the pan and the parchment peeled right off! It is now sitting very pretty in a cake box!!
