Can You Freeze Fondant?

I made a batch of fondant over the weekend, but it was almost twice as much as I ended up needing. Can I freeze the rest of it? Has anyone tried this before??

Yes you can. Just keep it wrapped up very well.

From what I have read as long as you keep air out of your fondant it is usually good. Air will dry it out. If you have a food saver this is a great time to use it. icon_smile.gif Also if you spread your fondant with a little bit of crisco it helps keep it softer longer.

I've heard varying opinions on freezing fondant. I just keep mine double wrapped in plastic wrap and store it in an airtight container. It's a solid white container so light won't fade the colors that I already have made. It works great.

At our Wilton Instructors seminar we were told that you could freeze fondant if you wrap it in plastic wrap and then in aluminum foil. You just have to keep all the moisture out. When you thaw it, let it thaw in the same packaging before you open it. It should be good as new when you go to use it. It should be good for 6 months to a year in the freezer.

I think I'd have to put it in a bag or a bowl as well, to make sure that you keep any of the freeze smell/taste out of it. But yes we were told the same thing about freezing.

Part of me wants to say that the trainer I had said to thaw it in the fridge, but I am not totally sure on that part.
