Rice Paper Question

I have a really dumb question! When using rice paper - do you trace images on the smooth or rough side of the paper? Then do you use piping gel or something to get the paper to stick to the cake?

Honestly, I can't remember which side I traced on, but I would think smooth. I believe I just laid it on the cake and it stuck. I would think piping gel would break it down.

I used the rough side just cause it was easier to write on with edible markers. You can use either side though. You can use piping gel to attach them but it made my colors bleed a little (when using the markers, did fine with the ones I printed using edible inks). If you're putting it on a crusting BC cake, try to get it on there before the icing crusts or you can use a little BC on the back to attach it. The only thing that will break it down is water so you won't want to use them on a whipped cream frosting or one that has a high water content.
