My recipe gives the option of either kneading by hand, or by dough hook. It's from this website I think.

i dont have a KA and i make it.. i do both kneading by hand and my mixer.. when it gets too thick for the mixer my hands take over.. just grease up your dough hooks AND your hands..

I made it for my last cake. I swear it was easy! I am so new to this I squeak. I have never worked with fondant and this was only my 4th cake. Just give it a try

When I made MMF for my neice's bday cake, I never even turned my KA on. I did it all by hand. Yea, it was time consuming, but I didnt mind . It turned our really good, too. The only thing was that it was pretty soft, and Im not sure if I put enough sugar in, cause I didnt have anything to compare it to. But it worked out for me and I would definalty do it again. icon_smile.gif Hope this helps!!

In fact with some of the Kitchen Aids that do not have the stronger motors, it doesn't work well to try to knead fondant by machine, so doing it by hand is still the only option.

I don't use my KA to make it...I just do it by hand!

Me too. I make mine by hand. It's not at all difficult to do it that way and it saves having to clean up the KA.

I use my hands....it takes me about 6 minutes per batch. Grease everything well....including both bowls and the spoon. After you melt the marshmallows and add it to the suger (only about half the sugar)...mix it with the spoon. Keep adding sugar little by little and mix with the spoon until you just can't anymore.

Then grease up that hand and start kneading still in the bowl. It shouldn't be sticky anymore...

Also...I never am able to get all the sugar in...I usually have a cup or so leftover and I get great MMF out of it. If it is soft that's because it's still warm. Leave it wrapped tightly overnight to rest and the next day it will be great!
