OK I have an idea and before I go wasting alot of time and ingredients I thought I would run it past you all first.

What if I made cream cheese icing but made it thick, rolled into small balls and refridgerated them to a solid state.
Then make a carrot cake into cake ball mix and formed it around the cream cheese icing, dipped into white candy melts.

What do you think? Yummy snack or waste of energy? thumbsdown.gifthumbs_up.gif

Sounds yummy, but maybe too sweet with the frosting center. Why not just mix the carrot cake with the cream cheese frosting and then cover white chocolate.

I don't know why but I have it stuck in my head to do a cake ball with a center. You know how it is sometimes a client says ohhhh you know what would be really good.... now I am stuck on it! LOL

Yummy snack thumbs_up.gif This is the same way you make stuffed meatballs and stuffed cake balls sound even better! Think it would be easier if the cream cheese balls were frozen first? Can that be frozen? With the meatballs, you make the ball first and then kind of shove the filling (like chunks/balls of mozzarella) into them and then mush it back together to cover the hole. I was thinking if you made them this way, it'd be easier if the cream cheese balls were frozen.

I agree with melxcloud that the icing may be too sweet but if the balls are gumball size or if you toned down the sweetness a little (add less sugar), I think they'd be perfect.

..they sound yummy. You could even sprinkle the balls with crushed walnuts..that's how I usually top off my carrot cake!

OK DH is out of town on business this week. Won't be back till WED. I thought I would give a variety of things a try. We will see how much time I have because of Thanksgiving. I host for all his family.
I will let you all know.
