Dumb ? Probably: Doctoring Cake Mixes?

I have been reading about "doctored cake mixes". What exactly is that, when is it used, and how is it made? Sorry if my question is dumb, but this is the first time I have come across this term. I have learned a whole lot by sitting in front of my computer for hours on end reading topics on this site. lol. Thanks in advance for your responses.

There's book called "The Cake Mix Doctor" and basically you add ingredients to a box mix to make it taste more like a scratch cake.

there are several cake books out there that just deal with doctoring mixes. One of the most popular is the cake mix doctor.

At anyrate doctoring a mix is smiply changing some of the added ingredients that are listed on the box, and there are as many ways to doctor a mix as there are people (well maybe not as many but seems to be pretty close some days) This makes the cake your own.

thank you for the site....I actually found that same site, and am trying that recipe as we speak. I baked two chocolate and two vanilla round 8' cakes for class on Monday. Since both my friend and I are attending these classes I figured we would try this recipe and make a chocalate/vanilla cake. We are doing the clowns on Monday. Wish us the best. The chocolate cakes are cooling and they look great hope they taste just as good. Thanks again.

I love the cake extender. I use it with every single recipe unless they want it from scratch.

I have a question though!!

When you do the chocolate without the cocoa it cooks great but it is not a chocolate, When I add the cocoa to the chocolate it just falls. Any suggestions. I did the chocolate cake in the extender and did not add the cocoa and it cooked good but it wasn't as chocolate.

When I add the cocoa to the chocolate cake extender it falls in the middle.

HELP!!

I just did the chocolate cake extender recipe. I added the cocoa and they seem fine. I'm not sure what you are referring to as they it is falling in the middle. Did you mix all the dry ingredients with a fork before mixing all those with the other ingredients?

Tilisha...I have added cocoa to a mix before. I make sure I fill my cake with plenty of batter and make sure it is good and done before I take it out. If it is not done in the middle it tends to fall. I have also noticed that I have to leave my cakes in for about 15 more minutes when I use the extender recipe. icon_smile.gif

Yes I added the cocoa to the chocolate cake mix. The cakes turned out great. I did leave the cakes in for 70 min. and baked at 330.
