Truffles-Need Help Fast!

Has anyone made the truffle christmas balls in the new wilton yearbook? I am teaching them in a class tonight, but can't get them to work. When I dip them in the chocolate, the truffle just melts and it becomes a giant mess. HELP PLEASE!!!!! THanks Keli

Hi Keli,

I've never made truffles using the Wilton recipe; however, I have made truffles in culinary school. We chilled the truffle centers (made from chocolate ganache) until they were rock solid before we dipped them into melted chocolate.

I did the cake balls the other week. I rolled them out and stuck them in the fidge for an hour. One batch still seemed kind of soft so I stuck them in the freezer for a little bit. When they felt really hard and solid is when I finally dipped them. At the end I ended up deciding last minute to do more and simply hand rolled them and then dipped them immediately. What a mess. They definitely melted and kind of de-formed. I didn't care because it was just for some friends and they still really tasted good. I've never seen the Wilton recipe either, so I hope this helps.
