Liqour Flavored Fudge??

Hi all! Does anyone here know how to make a fudge filling flavored with liquor such as Gran Marnier or Creme de Menthe etc...? I usually fill my chocolate cakes with Raspberry and am just getting bored with that. When I got married one of our cake tiers was flavored dark orange chocolate fudge. I thought I would try to figure out what that was. I can't seem to get a chocolate filling to be thick enough. All I can come up with is chocolate buttercream!! icon_smile.gif Thank you!!

I don't know if this would help, but when i took a course at a baker, he told us when mixing alcohol in a filling you have to mix the alcohol with water first.

You would have to mesure 100 gr wich would be 70 gr water and 30 gr liqeur.

This is the recipe i have that he gave us: 125 gr bavarian powder mix
100 gr of water, or the 70/30 if your using a liquer
500gr whipped cream.

Whip your whipping cream good but not too stiff. wisk the bavarian mix with the 70/30. to this you add a some of the whipped cream.
Then add the rest of the whipped cream with a wisk, wisk well.
Spread on cake strait away.

You can also add 200 or 300 grams of fruit (all fuits filling from a can) can be used. or juice.

Hope this help in some way this is an a verry dilisios filling. i made it with a chipolata bavarian mix.
