Can I freeze cupcakes? I want to make them early so I am not rushed when I need to have them done. How would you store them? In the pan and just covered? Does anyone do this? THanks Keli

You should be able to freeze the cakes themselves but I don't think you can freeze the icing. I would store them in an airtight container (rubbermaid, tupperware or the wilton cake carrier).

I've frozen them unfrosted in a ziploc freezer bag. If you wanted to freeze them frosted with BC, you could. Just freeze them on a cookie sheets and once they're rock hard, you can put them in some sort of freezer container. I'd let them thaw in the container though so you don't end up with any condensation on the actual cupcakes.

Thanks for the quick response. I am freezing them unfrosted, they will be used for a decorating demo. Thanks again. Keli
