I have a coworker who is very careful with what he eats because he has had a bad heartattack recently despite being very active and fairly healthy. It was a surprise to everyone at work. With that, every cake I bring in he doesn't really eat any of because of the use of eggs and sugar in the icing.

So I wanted to find a good egg-free, dare I say, healthy cake recipe and perhaps a frosting recipe that is lower in sugar or uses splenda-like sugar.

Edited to add: I know there are a bunch of recipes in the recipe section but I wanted to get some recommendations from whoever might have tried them.

I made this one with chocolate cake mix instead and added the Cake Mix Extender to it and it turned out very tasty, very moist, not too durable for carving or anything but great for sheet cakes.

Thanks for the replies.

Couldn't I also just use egg substitute for real eggs and applesauce for oil in a regular cake mix recipe? This would lower the problem with the cake and then I could probably use a whipped frosting of sorts.

Angel food cake would work but I want to be able to decorate it (mostly) like a regular decorated cake. I am working on the "let them see if they can tell the diff" sorta theory. Coworkers are good test subjects.

Yes you could, or use lowfat mayonaise instead of oil.
