Hi everyone~ I am new at working with chocolate, so would like to know if there is a difference between ordinary chocolate wafer I got from galloway's and Wilton's Candy Melt. I'd like to make fondant bows with these white chocolate wafers, but am not sure if they would work as well as Candy Melt. Also, I'd like to color these white chocolate, and I read from somewhere in the forum that you should use oil-based color paste. If I use the regular kind of Wilton color paste, would it work too? both of the wafers should be the same thing. if you want to make a bow our of chocolate wafers i recommend making the wafers into candy clay. There is a recipe of wiltons website.
Use the oil-based colours, not your regular gel paste you use for icing. The candy melts are oil based and need the same in a colouring. If you use the icing colours you run the risk of having the melts sieze up on you.
