Cookie Bouquet?

I have a silly question. For cookie bouquets...do you bake with the stick in or insert right out of the oven while the cookie is still soft? If the answer is the latter, how do you keep the stick from coming out?

I did my first cookie bouquet by attaching the sticks with royal icing after they were decorated. From that point on, I inserted the sticks into the dough before baking. It looked much neater and the cookies were firmly attached. To do this, the dough must be about 1/4" thick. You insert the stick about 1-1/2" into the cookie and twist slightly. Then bake according to directions or until lightly browned. Be sure to let the cookies cool before you move them so the stick stays in place.
