Does anyone have any idea on how to make an Italian Cream Cake sugar free? Client wants to know so wondering if anyone can help?

You could try using Splenda. I have the Splenda Cookbook. You just substitute the same amount for the Sugar.

What about the buttermilk? Or I wonder if I could take a suger-free cake mix and do it?

Do they make sugar free cake mixes? Check and see online if you can come up with a diabetic recipe. Google it!

Look for low carb recipes - they are normally very diabetic friendly.
