Hey ya'll! I've run into a small snag. I usually do a buttercream filling of sorts when I do my chocolate cakes because I don't really have a great filling recipe that compliments chocolate cake. No one has ever asked for anything different. I now need a filling other than buttercream. The customer doesn't care what it is just not the same as what will be on the cake. Do you have any suggestions or a great recipe that you've tried and loved? Please point me in the right direction. I've looked at the recipe section but nothing really jumped out at me. I really am looking for something with a bit of wow factor.

Biting my nails in anticipation....

I use the premade raspberry filling from my cake supply store....It is fantastic and very easy. If you want homemade, I bet someone on here has a recipe...

You can find cake fillings in the pie filling department in most grocery stores. You could even get a can of pie filling and blend it in your blender and use that. Flavors that come to my mind are cherry, raspberry and strawberry. The pie filling could be blended up really fine or left with little bits in it. Up to you.

One that seems to be a favourite with chocolate is either strawberries or raspberries. I usually take whatever buttercream I am using and mix it with the strawberry or raspberry filling, it's very good.

Really you could use anything, bavarian cream, pudding, mousse, Nutella, it's just about endless.

I have had brides going for my raspberry filling lately - they like it with chocolate cake (they like it with my white velvet too). I also had a bride recently tell me she wanted nutella as her choc cake filling (I whiped it a bit for a better spreading consistency first).

If you want my raspberry filling recipe (very easy) - give me your email. It's better then the store bought stuff and the recipe works with almost any fruit...

Orange marmalade with (or without) a bit of Grand Marnier is nice too.

Hey -

May I please have the raspberry filling recipe, too?

[email protected]

I like just about any fruit with chocolate cake. I found a low sugar orange marmalade the other day and torted a chocolate cake with it and got rave reviews. So easy.

I use only whip cream for my cakes as for filling you can use fresh strawberries, bananas, or both just do half & half or any kind of pudding or banana w/banana cream pudding.

Good Luck!

May I please have the raspberry filling recipe, too?
