Hi

I dont have Stand Mixer (KA) yet. I have to buy it. icon_redface.gif
I was doing my butter cream with hand mixer and it is going well.
But now I am doing Wilton Course III and I need Royal Icing and it is very hard to make one whole quantity at a time with hand mixer.
Its a really big problem for me right now.

Can I make half of the recipe? Will it work?

Sure, you can make half a recipe at a time, or even a quarter of a recipe. Just be sure to work that icing for at least 7 minutes. icon_smile.gif

Well, depending on the hand mixer, some just will not do the trick when it comes to Royal Icing. Also, some cannot handle running for long periods of time without burning out the motor. Hhmn, how do I know that, haha! If it starts to smell like burnt rubber or you start to see smoke or sparks or flames turn it off and unplug it right away. I have never been able to get a good consistency of Royal Icing using a hand mixer, but perhaps with one that has 200 or more watts of power, it is possible.

Yes, I tried to make royal icing before with my hand mixer and I smelled burning.
I was scared. I asked to my DH but he told me you better ask your CC Friends.
I stopped my work and wrote this forum about this problem.

Thanks I will make this recipe in small amount.

I should go and buy KA now.

YES YES!!!! Smoke=trouble.....found that out yesterday, was hoping to wait till after x mas for a stand mixer...but I guess not!!! And by the way, it takes a long time time to get that burnt smell outta your house!!!! YUCK!!

What is the wattage of your hand mixer? I have 300 Watt hand mixer that I use sometimes to mix smaller batches if I dont feel like using my K.A. I can make two batches of royal with the 300 Watt hand mixer without a problem.

But smelling a burning smell is usually a bad sign.

Oh my god, it is very embarrassing icon_redface.gif for me that I dont have KA and my only one hand mixer is 120 Watts. icon_cry.gif

That will definately have some difficulties. If you Can't afford a KA at this time I would suggest looking for a hand held with higher wattage. Something close to 300 Watts would be able to handle at least 2 batches of royal icing with no problem.

You can half the ingredients to make half the batch. Just remember to mix them together with a spatula when you combine them

Congrats on your purchase! Which one did you get? I have a little Cuisinart 7-speed SmartPower hand mixer that I've really been loving lately (when I'm too lazy to drag out the KA LOL). That mixer can handle just about anything short of bread dough!!

I got Hamilton Beach 7 speed 300W.

Cool Beans Nitu that should be a lot better than the 120 W mixer. I love my hand mixer. I dont keep my K.A. on the countertop so when I dont feel like dragging it out I just pull that out and I works great for small batches.
