It's Not For The Broncos!

So, I was supposed to make a ''tropical'' themed cake for a lady at DH's corporate office.
I didn't take a picture of the disaster, but I'll tell you about it.
I tried cream cheese icing for the first time. In between crumb coating and regular coating, I had it in the fridge for at least half an hour, so it wouldn't melt and to avoid spoiling the cream cheese. So I get the regular soat on there. And the cake cracks. So I have to recover it with more, darker icing. The i pip yellow letters. Orange borders. A ''hibiscus flower'' which was more of a pink and orange ''blob''. By the time I finish all of this, which is only 15 mins or so.... ***The whole side of the cake MELTS OFF and SLIDES DOWN ON THE CAKE BOARD***.
Now, I've had a sinus infection for a week, and I was ready to just send it with him and tell them not to pay me. So DH say ''Do you really want them to look at that cake and say that you made it?''
No.
So I get up, mix new buttercream dream (because I like it, it works for me), pull some frozen cakes out of the freezer and go to work. The second cake was ok, considering I leveled it, crumb coated, iced it, piped the letters, melted and molded the chocolate and finished in about 2 hours.
So DH takes both to work. The good cake is taken to corporate. They LOVED IT. Then he tells me that everyone looks at the disaster cake and says ''is that supposed to be for the broncos?'' Uh, no. But they ate it and said it was delicious, so at least that was good.
And I finally got to bed about 1:45 this morning.

I hate those kinds of days!! You need a break. Next time give the crusting cream cheese icing a try!
