Sue B's Chocolate Cake

Dense, rich and intensely moist chocolate cake.

  • 3/4 cup cocoa 3/4 cup boiling water 1 cup buttermilk 1 cup canola oil 4 large eggs 1 tsp. vanilla 2 cups granulated sugar 2 cups bleached AP flour 1/2 tsp. salt 2 tsp. baking soda


  1. 1. Preheat oven to 350F.
  2. 2. Mix cocoa and boiling water.
  3. 3. Mix buttermilk, oil, eggs and vanilla toether.
  4. 4. Sift dry ingredients together.
  5. 5. Mix dry ingredients into combined wet ingredients.
  6. 6. Mix in the cocoa/water.
  7. 7. Pour into two greased & floured 9-inch round pans lined with
  8. parchment.
  9. 8. Bake about 30 minutes, or until toothpick comes out clean.

Adding 1 tbsp espresso powder to the boiling water dramatically improves the flavour of this cake and makes it perfect!

I have made this at least half a dozen times and everyone loves it.
This is my go to chocolate cake now. Its tasty, but not overly rich or too sweet. Goes well with a sweet frosting such as buttercream. Dense enough to hold up find under fondant. Moist, delicious, and simple to make.
Super moist and delicious!!! Didn't have quite enough cocoa so I melted some semi sweet morsels in the hot water. Will definately make this again. Everyone loved it!!
