Mountain Dew Cupcakes

My sister inlaw is a Mountain Dew fanatic and is expecting her fourth child now. So, I wanted to do something special for her. I decided what better than Mountain Dew cupcakes that she had been asking me to make for about four months now. What?Don’t judge I have been busy

. She originally saw the recipe on allthigscupcake.com. I made some changes as the original didn’t have any orange flavoring so, I definately had to correct that. Hope you enjoy these as much as we did. I ate 3 and am not even the pregnant one. Sorry I don’t have a picture, they didn’t last long enough to take one.

Ingredients:


Amount Ingredient 1 cup (2 sticks) room temperature unsalted butter 2 cups sugar 4 large eggs 3/4 cup Mountain Dew 1 lemon juice and zest 1 lime juice and zest 1 1/2 teaspoons lemon extract 1 tablespoon orange extract 2 3/4 cups all purpose flour 1 1/2 teaspoons baking powder 1/4 teaspoon salt Icing 2 cup (4 sticks) room temperature unsalted butter 2 can sweetened condensed milk 1 lemon juice and zest 1 lime juice and zest 2 teaspoon orange extract 1 teaspoon (until desired consistency) Mountain Dew

 

 

Directions:

Preheat oven to 325. Line cupcake pan with liners. Mix by hand in a medium bowl the flour, baking powder, and salt. Don’t add sugar yet. It will be added with the wet ingredients in just a moment. With a stand mixer and whisk attachment, whisk butter on medium until smooth and creamy. Add sugar, lemon and lime zest and juice. Beat until light and fluffy. Add eggs one at a time and scrape the bowl between each egg. Now slowly add the dry ingredients in to the mixing bowl on low speed for about a minute until well incorporated. Add the Mountain Dew, orange extract, and lemon extract and mix until well combined. Scoop in to your lined cupcake pan until 3/4 full. Bake at 325 for about 18-22 minutes or until cake tester comes out clean.

For icing add 2 cups of butter in bowl for stand mixer with whisk attachment. Whisk on medium until creamy. Add 2 cans of sweetened condensed milk and whisk on medium to high speed until stiff consistency. It will take a while to thicken up but it will happen. Add juice and zest from one lemon and one lime. Add 2 teaspoon of orange extract and mix well Now add your Mountain Dew one teaspoon at a time until it is your desired consistency.

Wait for cupcakes to cool then frost and ENJOY!
Makes 24 cupcakes.

you can actually use condensed milk to make frosting?....im going to try this method...will it actually have the consistency of regualr frosting ...such as medium or stiff?....please let me know! But the recipe sounds delish!....mmm mmmm :o)

Yep. I really use sweetened condensed milk. It really gets medium to stiff. You do have to whip it for a long time though (like10 minutes). It doesn't crust really good but it sure tastes GREAT!

Mountain Dew is a citrus soda. It has orange, lemon, lime flavors, and caffeine in it. It is a huge seller of soft drinks in the US. I Googled it and it says it can also be located in England where it is imported from the US.

It is really hard to find Mountain Dew in Europe. I have found it at the train stations in Germany, haven't checked England, but I'm sure they have it somewhere. It's neon green!

I found it at the chunnel crossing in Folkstone, but I'm guessing you don't want to pay for a chunnel ticket just for some Dew. I haven't seen it anywhere else, though. But, I've only been to England twice, and I haven't been to any stores that might import it.

There are so many fun cupcake recipes. Is there a reason they're listed as cupcake and not cake recipes? What's the difference?

I haven't tried it yet as a cake but I personally use cakes recipes and cupcake recipes interchangeably, so I don't see why it wouldn't work. I also plan on trying this as a cake.

It does sound delicious. Is mountain dew a fizzy drink because if so I wonder if we could substitute Lilt which is a citrus flavour drink here in UK.

My dad and my husband LOVE Mountain Due. I'm thinking I might have to make these for father's day! For the frosting, can you 1/2 and 1/2 the butter with vegetable shortening?

I haven't ever tried with shortening as I don't care for the taste personally, but if you try it let us know how it works! Nextime I may try with shortening just for when the heat rises in Texas!

This is a pretty good recipe! I made this today using Inca Cola instead of Mountain Dew. Inca Cola is a yellow colored carbonated soft drink here in Peru and it out sells Coca Cola - so Coca Cola bought the company. Since is has more of a vanilla flavor with orange undertones I tweaked the recipe accordingly and used orange zest and juice instead of lemon but I did use lime zest and juice from 1 lime. I also used vanilla extract to replace the lemon extract. For the frosting, vanilla extract in there as well, along with the juice and zest from 1/2 orange.

The frosting while tasting very good - which is obviously a big plus - is not, in my opinion, suitable for piping. It's too soft and that was after beating it with a whisk attachment on speed 7 of my Kitchen Aid Pro 600 for 15+ minutes. You can spread it very well or pipe with a plain tip but it's not thick enough to pipe with a star tip and retain its shape. Next time I will make swiss-meringue buttercream frosting and flavor it up accordingly.

Overall though, the cupcakes were moist and tender and frosting made from sweetened condensed milk (a first for me) made for a great tasting cupcake. Thanks for sharing.

You can get Mountain Dew here in England pretty easily - however its generally Mountain Dew Energy, which is abit different to the stuff in the US. Personally I think the US Mountain Dew is nicer, but if you want to try the energy one they generally have it every where, from Tesco to Poundland!

I am shocked that Pepsi hasn't cornered the market in England! ( They do have coca cola right?) This may be a dumb question, but do you have fast food restaurants in England? Mcdonalds, KFC, etc. What do restaurants serve for beverages? Obviously, I haven't traveled enough!
