Eggwhite Gumpaste

This is my favorite gumpaste recipe. It dries light and strong and is easy to make. The recipe is taken from the ebook "Icing Only" by Kim Knott. It is ready to use immediately if you use shortening on your hands but will be even easier to work with if you let it sit overnight in an airtight plastic container or plastic bag. The recipe makes 2.5 cups of gumpaste and works beautifully in silicon molds. The roses in the picture were shaped by hand, then when dry, dusted with Wilton pearl dust. The leaves were colored by mixing leaf green paste color into the gumpaste.


Amount Ingredient
2 large egg whites
8 cups powdered sugar
1 1/2 teaspoons karaya gum (gum tex)
1/4 cup warm water


1. In a medium bowl beat egg whites with an electric mixer until frothy (about 30-40 seconds). 2. Add 2 1/2 cups icing sugar and beat until well combined. 3. Sprinkle the karaya gum on top of the mixture and then beat again for about 15 seconds. Beat in another 2 1/2 cups of icing sugar. The mixture will be dry and crumbly. 4. Add 1/4 cup warm water and mix until smooth. 5. Put the final 3 cups of icing sugar in the bowl and knead in by hand. You may have to take the gum paste out of the bowl and continue kneading.

is it possible to use tylose powder instead of gum tex? thanks in advance!
Tylose may not work as well. If you decide to try it, mix it into the 2 1/2 cups of icing sugar in step 2 then eliminate step 3. Good Luck.

Once this gum paste is dry it will keep for 6 months in a cool, dry container. Even thought it has raw eggwhite in it, once it is dry the sugar and the dryness inhibit bacterial growth.
So far this is my favourite gum paste recipe. I've been using it since early this year. Everything goes well and it dries..unlike Satin Gumpaste.
The gumpaste is a bit crumbly does not stretch like the Satin Ice one, how do i add elasticity?
I'm new to working with gum paste. I've always either used buttercream or royal icing. Thank you for sharing the recipe. I can't wait to try it.

Wow thank you thank you once more. Finally someone has come up with the proper way to make gum paste with gum Tex. I tried so many times to make it the way Wilton has on the can and each time it came very crumbly, came to a point Lo, I just wanted to call Wilton and tell them to get the proper amount of water that was supposed to be added instead of 4 tbls,so I went ahead and tried 1/4 of a cup with the glucose(in which I am not fond of either) because to me that is not homemade gum paste but needed it done for a wedding cake. Going to make a batch this afternoon. Thank you again, many have posted for those but I am unable to purchase here in Canada.😊😉
