This is a cake my mother always made. This is the only carrot cake recipe I use. Anyone who has ever had it loves it!
The Best Carrot Cake Ever!
3c. grated carrots, 1c. oil, 3/4c. white sugar, 3/4 c. brown sugar, 3egggs, 1c. chopped walnuts, 2c.flour, 1tbsp. cinnamon, 1tsp. bkg. soda, 1 tsp. vanilla, 1/2 tsp salt.
Pre-heat oven to 350. Prepare cake pans (2 8in or 1 9×13) . Mix all dry ingredients in lg. bowl and set aside. Grate carrots n food processor. In med bowl mix sugars, eggs, and vanilla.Add carrots and walnuts and gradually stir into flour mixture. Pour into prepared pans and bake 25-35 min. or til toothpick comes out clean. Cool and frost with cream cheese frosting.
