Chocolate Cake Eggless Cake

A few weeks ago I had to come up with an eggless cake recipe. I wasn’t happy with the ones I had found so for some reason I called Betty Crocker to ask if they had any recipes. I struck gold, they sent me several and I thought it may be nice to share them.

Chocolate Cake Eggless Cake

Ingredients

  • 1 cup sugar
  • 1/4 cup plus 2 tablespoons cocoa

  • 3 tablespoons shortening, melted

  • 1 2/3 cups cake flour or 1 1/2 cups Gold Medal® all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 cup buttermilk

  • 1 teaspoon vanilla

Instructions

  1. Heat oven to 350°. Grease and flour square pan, 9x9x2 inches. Mix sugar, cocoa and shortening in medium bowl. Mix flour, baking soda and salt; add alternately to sugar mixture with buttermilk and vanilla. Pour into pan. Bake about 30 minutes.

I can't wait to try this. My son has peanut and egg allergy. I have tried the egg replacer in the yellow box, but it makes the cake deflate and takes forever to cook, and the soda can cakes fall apart. I hope this one will stick together enough to make stacked/tiered cakes!!!!! Thanks for sharing.

Is this a really moist cake? I'm looking for something to sculpt that is egg free and I've tried a couple recipes and they couldn't be shaped.

I made this tonight, when I tasted the batter I thought it was missing something so I added 1/2 cup sugar and one choc. pudding cup. Turned out real nice almost like a fluffy brownie. My babysitter is looking for egg-free cupcakes for her sons class party . I think she will like these.
