Chocolate-Marshmallow Cupcakes

I thought I would experiment with marshmallows and chocolate…the result was awesome!

Chocolate-Marshmallow Cupcakes

Ingredients

  • 1) Your favorite chocolate cupcake recipe
  • 2) Bag of large marshmallows

Instructions

  1. Mix up your favorite chocolate cupcake recipe and use an ice-cream scoop to place in the cups. (Dont overfill!) Take a bag of large marshmallows and cut some mallows in half (not longwise). Poke a half-mallow into the batter of each cupcake until its just below the surface. Bake as your cake recipe directs. The marshmallows will melt with the chocolate cake to create a delicious combination. Ice with buttercream or decorate as desired. So good!
  2. NOTE: Because the marshmallows displace some batter in each cupcake, your standard 2 dozen cupcake recipe can actually yield 2.5 dozen.

I just made these and due to my own over enthusiasm put in whole marshmallows instead of halves. Well, I made exploding volcano cupcakes!! Those marshmallows just popped out and oozed over the sides. The cupcakes are still absolutely delicious but next time I'll be more restrained with the marshmallows!!

I tried these and it was a bust!! How do you keep the marshmallow from floating to the top and making and ooey gooey mess?

I tried these and couldn't taste... or see the Marshmallows inside. It was like they dissolved into the cake batter. It made the cupcake extra moist though! Was definitely good, but not quite what I was expecting. I used generic marshmallows though...maybe that's the problem.

I have to do cupcakes for a church's westen themed bible school and thought this would be great as it is similar to smores so i might jus try this... snds good to me :)
