Good with Pinneapple,Coconut or Butter Cake. Yummy =] Enjoy..

Pina Colada Buttercream


  • 2 Sticks of Butter ( Rm Temp )
  • 2 Cups of Shortening
  • 1 Teaspoon of Pinneapple Juice
  • 2 Teaspoon of Coconut Cream
  • 2 lb of Confectioner Sugar
  • 1/2 Teaspoon of Salt
  • 1 Tablespoon of Meringue Powder
  • 1/2 Cup of Shredded Coconut


  1. Cream Shortening,Butter,Flavor,Liquid & Shredded Coconut . Gradually, add the Sugar to cream the Mixture. Mix well on Low speed. Until Smooth & Creamy. Don’t over mix. ;-D Enjoy. Let me know if you liked the Recipe.

It is a really good recipe. Though I used coconut extract instead of coconut milk. I paired it up with a pina colada cake with pineapple rum filling for a base of a four tier wedding cake. The combination worked really well and was a huge hit.

It did crust well - though because of the coconut and pineapples, does not give a smooth finish.

oh man, I wonder if omitting the coconut shreds was my down fall, It tasted too much like the shortening to me. too bad b/c so many ppl seemed to really like this recipe.


I'm sorry to say, but these are awful directions. Can you please specify how long to mix, not just say do not over mix. Also, when do you add the meringue powder. And what is coconut cream?


Ok. So I tried this. It tasted Luke a really good, really sweet buttercream. My husband nor I could get any coconut or pineapple flavor. But I'm going to play around with it. Thanks for posting.
