Lutie's Chocolate Butter Cream Icing

This smooth chocolate butter cream can be made to look like fondant. It makes a really wonderful smooth icing, yet, it can get a slight crust on it if you use a little more vegetable shortening than butter. Sometimes I do 3/4 cup butter and 1 1/4 cups of vegetable shortening… depends upon what kind of cake I am making.

Lutie’s Chocolate Butter Cream Icing

Ingredients

  • Butter
  • Vegetable Shortening
  • 10 X (powdered sugar)
  • Good Quality Cocoa
  • Salt
  • Meringue Powder
  • Heavy Whipping Cream
  • Almond and Vanilla Extract
  • Butter Flavoring

Instructions

  1. Beat for 5 minutes:
  2. 1 cup butter or margarine
  3. 1 cup vegetable shortening
  4. Slowly add:
  5. 2 lbs powdered sugar (8 cups) (sifted with cocoa)
  6. 1/2 – 3/4 cup good quality cocoa *
  7. 1/2 teaspoon salt
  8. 1- 1 1/2 tablespoons meringue powder
  9. Add
  10. 4 ounces of heavy whipping cream
  11. 1 teaspoon vanilla
  12. 1 teaspoon almond extract
  13. 1 teaspoon clear butter flavoring
  14. Add an additional (if you feel you need it)
  15. 2 -3 ounces whipping cream
  16. Beat for 10 minutes
  17. * The amount of cocoa depends upon how dark you want it

does this have to be refrig or can it stay out like the regular buttercream?/and also does it crust up?thank u
