This recipe was given to me by my Grandma Alta when I got married.
Grandma Alta’s Carrot Cake
Ingredients
- 4 eggs
- 2 C. sugar
- 1 1/2 C. salad oil
- 2 C. flour
- 2 t. soda
- 3/4 t. salt
- 3 C. shredded carrots
- 4 t. cinnamon
Instructions
- Beat eggs, sugar, and oil. Sift flour, soda, salt and cinnamon and add to first mixture along with shredded carrots. Bake at 350 degrees for 50-60 mins. Cool and frost with cream cheese icing. I make this single recipe in 2 8″ pans.
- Really delicious and it always makes me remember what a great cook my Grandma was!!
