Grandma Alta's Carrot Cake

This recipe was given to me by my Grandma Alta when I got married.

Grandma Alta’s Carrot Cake

Ingredients

  • 4 eggs
  • 2 C. sugar
  • 1 1/2 C. salad oil
  • 2 C. flour
  • 2 t. soda
  • 3/4 t. salt
  • 3 C. shredded carrots
  • 4 t. cinnamon

Instructions

  1. Beat eggs, sugar, and oil. Sift flour, soda, salt and cinnamon and add to first mixture along with shredded carrots. Bake at 350 degrees for 50-60 mins. Cool and frost with cream cheese icing. I make this single recipe in 2 8″ pans.
  2. Really delicious and it always makes me remember what a great cook my Grandma was!!

I tried this cake out for a friend that loves carrot cake and he said that it was the best he'd ever eaten. We love it!

Very nice cake. Really moist and flavorful. I didn't put any nuts or raisins in it but it was still delicious. I frosted mine with cream cheese icing and covered it in fondant. I would highly recommend this recipe and will definitely use it again myself.

this is the BEST carrot cake ever... creme cheese icing... yum.. I added crushed pineapple to the mix... bake it maybe 5-8 min's longer....

just made this and it is really the best I have tasted! i made a cream cheese buttercream to frost it and it will be covered in fondant as part of a anniversary cake! thanks for posting the recipe :)

Hi, I believe she means vegetable oil for the "salad oil". This is usually what many people use for their salads. i don't think she is talking about olive oil.
