Lemon Buttercream Frosting

I’ve been messing around with the Wilton buttercream recipe for a while trying to find something that will hold shape and also taste good. This recipe is the best one I have come up with so far. The icing holds shape best when it’s cold, but does not get too creamy when it’s warm either. Tastes yummy too =]

Lemon Buttercream Frosting

Ingredients

  • 1 stick butter
  • 1 cup shortening (crisco)
  • 4 cups powdered sugar
  • 1 tbsp meringue powder
  • 2 tbsp milk (can add more if want thinner icing. I’ve found that if this recipe is too thick, just heat it up and the butter softens up and no additional liquid is needed for thinning.)
  • 1 tsp lemon extract

Instructions

  1. 1. Allow butter to soften (if it’s too hard you get butter chunks in the icing)
  2. 2. Sift confectioners sugar
  3. 3. Mix all ingredients in bowl with electric mixer until smooth
