Uktimate Strawberry filling

This is a very delicious, easy to make and tasty recipe. Can be used as a filling to a cake or a topping to a shortcake. My kids love it alone.

Uktimate Strawberry filling

Ingredients

  • 2 cups of Pastry Pride vanilla whip topping (or cool whip)
  • 1 small package of Strawberry Jello
  • 3 baskets of strawberries (cut in 4 or 6)

Instructions

  1. Whip both cups of Pastry Pride until peaks from. Add your jello and strawberries. Mix with a large spoon. Refrigerate for about 1-2 hours until Jello completely dissolved and mixture is nice and thick.

I made this strawberry filling about 3 wks ago and it was very light and tasty. I wouldn't use it to fill a cake, but it is delicious as cupcake frosting (or to eat by the spoonful!)..

dezmadre, do you think it was 'light' because of the fresh strawberries??? what if you mix just the Pastry pride and jello?

I'm not a big fan of fruit fillings in general, but omg I made this and it was heaven! I couldn't stop eating the leftovers! Since I was making this to ice cupcakes, I pureed my strawberries instead of cutting them, and it was wonderful. Such an easy recipe to make, will definitely continue to. However, because it's very light, it might not be thick enough to hold as cake filling but I am still going to try that out! The only question - how long can I keep this out of the fridge before serving?? I'm using it for an outdoor wedding! I totally have to guesstimate on this one :)

I make a filling similar to this. The trick to keep it thick is, don't under beat the pastry pride & fold in the pudding & strawberries. It's important to slowly fold them in. Stirring makes the whipped cream go flat.
