this cake is what I use for most wedding or sculpted cakes i make, you can sub 6oz cocoa powder for flour to make chocolate cake

Sour cream butter cake


  • Egg yolks 7 1/2 oz
  • sour cream 1#
  • vanilla 1/2 oz

  • Butter 1#1oz

  • cake flour or ap flour 1#3oz
  • sugar 13 1/2oz
  • baking powder 1/2 oz
  • baking soda 1/4 oz
  • salt 1/4

  • Egg whites 8oz

  • sugar 6oz


    seperate 8 eggs saving the whites for later

  1. cut up butter
  2. stir together yolks, sour cream, and vanilla in small bowl
  3. sift dry ingredients into mixing bowl, (use paddle attachment)add yolk mixture a third at a time to dry ingredients on low speed; also start adding your cut-up butter to this mix as well. Mix for 1minute between each addition
  4. Once all ingredients are mixing; in a seperate bowl make a common meringue with egg whites and sugar, peaks will be soft don’t over beat
  5. Stop mixer remove bowl and using paddle or spatula fold meringue into cake batter.
  6. Fill pans 1/2 full and bake at 325

on the recipe is says " flour- 1#3oz", what does this mean?? thanks

It means that the flour isn't measured by volume but by weight: 1 lb & 3 oz.
