Chocolate Tiramisu Cupcakes

A different take on Tiramisu cupcakes.

Chocolate Tiramisu Cupcakes

Ingredients

  • Cupcakes:
  • 1 box of chocolate cake mix
  • Espresso Syrup:

  • 2/3 cup of water
  • ½ cup confectionerâs sugar
  • 5 teaspoons instant coffee granules
  • Creamy Coffee Filling:

  • 1 (8oz) package of cream cheese (softened)
  • 3 tbls. coffee liqueur
  • ¼ cup sweetened condensed milk
  • 1 ½ cups of whipping cream, whipped (Cool Whip)
  • Chocolate Cream Cheese Frosting:

  • 1 (8 oz) package cream cheese, (softened)
  • ½ cup (1 stick) butter, (softened)
  • ½ cup unsweetened cocoa powder
  • 1 (16 oz) confectionersâ sugar
  • 1 teaspoon vanilla extract
  • Tip: Use foil baking cups

Instructions

  1. Cupcake:
  2. Bake as directed on box.
  3. Espresso Syrup:
  4. In a small heavy saucepan over high heat, combine the water, ½ cup confectionerâs sugar and coffee granules. Bring to a boil, stirring occasionally. Remove from heat and let cool.
  5. Use a fork to poke a few holes into cupcakes so that they will absorb the liquid. (Note: I use a small barbeque brush and paint the espresso syrup over the cupcakes)
  6. Creamy Coffee Filling:
  7. Beat cream cheese, coffee liqueur and sweetened condensed milk until well blended. Fold in the whipped cream. (Note: chill at a minimum of 4-5 hours, best to make a day in advance)
  8. Chocolate Cream Cheese Frosting:
  9. Beat butter and cream cheese until creamy. Add cocoa powder, vanilla extract and confectionersâ sugar, scraping down the sides of the bowl as necessary. Increase mixer to medium and blend until frosting is fluffy.
  10. I had to do 4 days of Curves after eating these.
