This is a moist carrot cake and the pineapple adds a a great taste!
Yummy Carrot Cake!
- Carrot Cake
- 2 cups sugar
- 1 cup oil
- 2 tsp vanilla
- 2 cups grated carrots
- 1 cup crushed pineapple (don’t drain)
- 2 1/2 cups sifted flour
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 cup coconut or chopped nuts (optional)
- Combine eggs, sugar, oil,and vanilla. Beat until creamy. Fold carrots and pineapple. mix well.
- Sift dry ingredients together, add to batter mix well stir in chopped nuts or coconut.
- 325 for 45 min to 1 hour
how much does this make? What size cake?
I just put this in the oven. The batter tastes awesome! I omitted the coconut but kept the nuts. I also used 2 cups of Splenda instead of the regular sugar. If it tastes as good baked as the batter does unbaked, this will be da bomb! :-P
This recipe made enough for one 10" round, half full.
Can I just say MMMMMMMMMMMmmmmmmmmmmm! It IS really yummy, and I will definitely make this again!
