This is a moist carrot cake and the pineapple adds a a great taste!

Yummy Carrot Cake!


  • Carrot Cake
  • 3 eggs

  • 2 cups sugar
  • 1 cup oil
  • 2 tsp vanilla
  • 2 cups grated carrots
  • 1 cup crushed pineapple (don’t drain)
  • 2 1/2 cups sifted flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 cup coconut or chopped nuts (optional)


  1. Combine eggs, sugar, oil,and vanilla. Beat until creamy. Fold carrots and pineapple. mix well.
  2. Sift dry ingredients together, add to batter mix well stir in chopped nuts or coconut.
  3. 325 for 45 min to 1 hour

I just put this in the oven. The batter tastes awesome! I omitted the coconut but kept the nuts. I also used 2 cups of Splenda instead of the regular sugar. If it tastes as good baked as the batter does unbaked, this will be da bomb! :-P

This recipe made enough for one 10" round, half full.
