I made these cupcakes, filled with Cake Boss’s raspberry filling, and WBH House BC…They were DELICIOUS!
Easy Coconut Cupcakes
- 1 box yellow cake mix
- 1/3 cup oil
- 1 cup buttermilk
- 4 eggs
- 3 tsp coconut extract
- 1 cup sweetened shredded coconut
- Combine everything except the shredded coconut in mixer. Mix on low for 30, then medium for 2 minutes. Add coconut and mix on low until combined. Bake at 350 for 15-20 minutes.
