Diabetic Fruit Cake

You’d never know this was diabetic! I even fooled my hubby!

Diabetic Fruit Cake

Ingredients

  • 1 kg mixed fruit
  • 1 x 400ml apricot nectar
  • 2 cups self raising flour
  • 2 eggs

Instructions

  1. Soak the fruit overnight in the apricot nectar. Add flour and eggs, mix altogether. Add more juice if needed. Cook in slow oven 150c for 1.25 hours. I cooked this in a 7in tin so it was nice and high, and it was in the oven for close to 2 hours.

To fix this cake for a diabetic, I have a question or two...:) 1. Is the mixed fruit dried or dehydrated & does it have any sugar on it? (Is it the kind you see in the small containers from Thanksgiving to Christmas in the grocery stores here in the States or some other kind of fruit?) 2. Is the apricot nectar available in a can or jar? 3. Does anyone know the English conversion for this recipe? Thanks for any help!

1 US cup = 240 mL. Therefore, 400 mL = 1-3/4 cups. I, myself, am wondering what are apricot nectar and mixed fruit. I read some articles, it says that apricot nectar = apricot juice, but I am not sure. I really want to try this recipe though.

Just browsing...apricot nectar and apricot juice are two different things. In Canada, nectar can be found in the organic section or in the "real juice" aisle of the grocery store. I would assume, since this is supposed to be a diabetic friendly cake, that the fruit would be non sugared. Hope this helped...?
