I received an order from a customer for a pineapple cake. She tried to explain to me the recipe she was wanting replicated but I had no idea what she was talking about. So….I made this recipe up. It’s simply fabulous. I started with a DH Pineapple Supreme cake mix. Enjoy!!!

Pineapple Cake


  • CAKE:
  • 1 DH Pineapple Supreme Cake Mix

  • 1 1/3 cups pineapple juice (see note)
  • 1 cup flour
  • 1 cup sugar
  • 1/2 cup oil
  • 1 cup sour cream
  • 1/3 teaspoon salt
  • 1 teaspoon vanilla extract

  • NOTE: I drained a can of crushed pineapple (actually I ended up having to wrap it in cheese cloth and squeeze it) and reserved the pineapple to put in my icing.

  • ICING:

  • 1 cup butter

  • 1/2 cup crisco
  • 1 lb cream cheese
  • 3 teaspoons vanilla extract
  • 3 lbs powdered sugar
  • reserved crushed pineapple to taste (I like it heavy)

There are no eggs in the recipe, did you omit them, or do the juice & sour cream the binders?

I made this cake for my nephews bday. I also was wondering about the eggs, so I used the eggs according to the package directions. Everything turned out great & it was super yummy =)
