Spiced Eggnog Icing

I came up with this icing this weekend while making eggnog cupcakes for work. If you like a very strong, flavorful icing like I do, this is perfect! It doesn’t hold back.

It crusts well and can be used for decorating. Thin out with milk for spreadable icing. It was a hit at the office party!

Spiced Eggnog Icing

Ingredients

  • 1 stick salted butter (room temp)
  • 1 tablespoon spiced rum (can also use Watkins or Madagascar vanilla extract)
  • 1 tablespoon meringue powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon ground clove
  • 1/4 teaspoon nutmeg
  • 2 cups sifted powdered sugar
  • 1/4 cup eggnog or eggnog creamer
  • 2 tablespoons milk (optional)

Instructions

  1. 1) Cream butter and rum together
  2. 2) add meringue powder and spices, cream for a couple of seconds till blended
  3. 3) add powdered sugar and eggnog and blend for 2-4 minutes, or until well blended and creamy. Makes medium-stiff consitency icing.
  4. If the icing is too thick, thin it out with milk. The recipe can be doubled easily.

I tried this recipe and it was too runny ...and I didn't even add the milk....It tasted good but couldn't use it...

Shelly42: Try using 1/2 C Crisco, 1/2teaspoon butter flavor, and a pinch of salt instead of the salted butter which breaks down easily making the icing runny. I would also suggest increasing the powdered sugar to 1 pound. I find that a kitchen scale is much more reliable than a measuring cup when it come to baking. Good Luck and happy baking!
