This is a good alternative for the Basic Choco Chip and Ricotta Filling.
Fluffy Chocolate Chip and Ricotta Filling
1 pound Ricotta cheese
3/4 cup unsifted powdered sugar
2 teaspoons vanilla extract
3/4 cup milk chocolate chips
1 cup heavy cream
Beat cheese until smooth. Add vanilla and beat in sugar. Mix in chocolate chips. Beat the cream until stiff and fold into the chocolate and cheese mixture. Cover; chill several hours. Remember to use this filling shortly before serving the cake as the cake will get soggy.
This filling is lighter and richer than the Basic Choco Chip and Ricotta Filling, but if you are on a diet–forget eating this!
