Biscochos (West Texas Style)

I have always loved biscochos. When a customer called for an order I thought…no problem! That was until I tried using shortening for this….acceot NO substitutions! USE the LARD!

Biscochos (West Texas Style)

Ingredients

  • 1 C. Lard
  • 2.5 C. Flour
  • 1.5 C. Sugar
  • 1 tsp. Cinnamon
  • 1 Egg
  • 1 tsp. Almond extract
  • 1 tsp. Anise seeds
  • Orange juice
  • Cinnamon and sugar to dredge cookies

Instructions

  1. Preheat oven to 350. Mix all ingredients. Add orange juice if mixture seems too dry. Roll out dough to about 1/4″ to 1/2″ thick. Cut using your favorite small cookie cutter. Place about an inch apart on an UNgreased sheet. Bake for 10 -15 minutes. (note: these cookies do not brown) Dredge in cinnamon and sugar while warm.

These cookies are SO not fat free. Eat with caution- they are addictive!
