Four Chip Fudge

This is my mother’s recipe. I won a blue ribbon at the county fair with it. People say there is a fruity, almost cherry flavor to it, but I don’t taste it.

Four Chip Fudge

Ingredients

  • 3/4 c butter
  • 14 oz sweetened condensed milk
  • 3 tbsp. milk
  • 1 pkg semi-sweet chocolate chips
  • 1 pkg milk chocolate chips
  • 1 pkg peanut butter chips
  • 1 cup butterscotch chips
  • 7 oz marshmellow creme
  • 1 1/2 tsp vanilla
  • 1 tsp almond flavoring
  • 1 lb. walnut – coarsely chopped

Instructions

  1. Chop up the walnuts and set aside. Melt butter in Dutch oven – stir in sweetened condensed milk and milk. Add all morsels, stirring constantly until mixtureis smooth. Remove from heat. Stir in marshmallow and flavorings. Stir in walnuts. Spoon into a 15x10x1″ pan. Chill.

Looks like a great recipe... but your comments are what really made me smile.  When I was growing up, my mom always made what I considered the best chocolate cake with a chocolate/cherry icing.

As I grew up and developed my interest in baking I learned all the truths - it was a chocolate mayonnaise cake (that's why it was so moist), which I still make today - AND, her icing was always chocolate, flavored with (here it comes)... ALMOND EXTRACT.  Turns out many people think almond extract has a cherry taste to it.  Who knew?

I love almond extract, although I now use an almond emulsion that is even better, and I use it in so many things.  To me, and to some others, I still taste a strong hint of cherry!  I have trained my taste buds to know better, like I trained them to know cilantro really doesn't taste like soap, but there is always that memory of chocolate/cherry icing.
