Here is a photo ..( the cupcake has a bite ) http://cakecentral.com/g/i/2364002/a/2365002/carrot-cupcake-with-cream-cheese-frosting/ Ingredients:6 cups - grated carrots 1 cup - raisins (opcional) 4 - eggs 1 1/2 cup - white sugar 1 cup - vegetable oil 2 tsp - vanilla extract 3 cups - All Purpose flour 1 1/2 tsp - baking soda 1 tsp - salt 4 tsp - ground cinnamon 1 cup - chopped walnuts (opcional) 1 cup - brown sugar Directions:-In a medium bowl, combine grated carrots and brown sugar. Set aside for 30 - 60 min.(the time is opcional, you could leave it less time if you like) , and then stir in raisins -Preheat oven to 350' F , grease and flour (2) 10" cake pans . -In a large bowl, beat eggs until light, gradually beat in the white sugar , oil and vanilla. Combine together the flour, cinnamon, B. Soda and salt and stir into the wet mixture. -Finally stir in the carrot mixture and the walnuts - Bake for 45 - 50 min or until toothpick comes out clean ,when completely cooled frost with cream cheese frosting and ..........ENJOY !
