This is a very tart and moist cake. The cream cheese frosting cuts the tartness of the cake. Everyone that has had it, LOVES it!
1 box lemon flavor cake mix 1 sm. box lime gelatin 3/4 cup water 1/3 keylime juice 1/3 c oil 3 eggs Glaze: 1 cup Powdered sugar 2 Tbsp. Keylime juice Combine ingredients and beat on medium speed for 2 minutes. Pour batter into prepared pans (sprayed with cooking oil, I use pam) or cupcake liners. Cool. Pierce top several times with wooden skewer or fork and pour glaze over cake/cupcakes. Frost with cream cheese frosting (I used Cream Cheese Butter cream found here on CC). Makes 2 dozen good sized cupcakes or 1 9x13 cake. Round cake pans would work too.
