Peppermint Patty Recipe

Peppermint Patties

2 cups confectioners’ sugar, sifted
3 tablespoons corn syrup
2 teaspoons water
1/4 teaspoon peppermint oil
8 ounces dark chocolate
extra sugar for dusting

Line a baking sheet with parchment paper and set aside.
Combine liquid ingredients and slowly sift in sugar, stirring to incorporate.
Remove sugar dough from the bowl and knead on a work surface dusted with sugar.
Once a smooth and uniform ball has formed, roll dough 1/4-inch tick. Dust work surface and rolling pin to prevent sticking.
Dip a round cutter of your choice into sugar and cut rounds out of dough. Any shape cutter can be used. Place cutouts onto baking sheet.
Leave cutouts uncovered in a cool area for 2 to 5 hours, until the surface has crusted.
Melt chocolate in a double boiler or microwave.
Place cutout onto a fork and dip into chocolate, let excess drip off, then place onto parchment lined baking sheet.
Once chocolate is set, enjoy!

The recipe looks fine, but I'm concerned about GMOs. All corn syrup now is made from GE corn. . Could you run recipes that pointedly avoid GMOs? I know you can buy organic, non-GMO powdered sugar, cornstarch, flour, butter, eggs, etc.

I'm curious about this recipe, might have to give it a try. I have made them before using a recipe that included sweetened condensed milk and they got rave reviews. Made them in the shape of shamrocks and died the filling green for St. Pattys day! Also I find it helpful to freeze the filling after you cut it before you dip it, to make sure it doesn't start to melt into the chocolate.
