Whipped Shortbread Cookies

All the butter flavor of shortbread, but without the fuss of rolling dough..

Whipped Shortbread

1 cup butter softened
!/2 cup icing sugar
1/2 teaspoon pure vanilla extract
1 1/2 cups all purpose flour
1/2 cup cornstarch

Preheat oven to 300 degrees F.
Beat butter until light, slowly incorporate sugar, beat until fluffy.
Add vanilla.
Sift flour and cornstarch together and incorporate into butter mixture in 3 additions.
Drop by teaspoon onto baking sheet lined with parchment.
Press with a fork dipped in confectioners’ sugar.
Bake 25 minutes, do not brown.

Super easy to make and very delicious. I made half the batch plain, then added chopped cranberries and macadamia nuts to the other half batch for some extra Christmas cheer. Dipped in icing/confectioners/powdered sugar whilst still warm added a nice touch.

Just dropping the teaspoonfuls of dough/batter made for 'untidy' looking cookies tho - next time I will roll into neater look shapes with my hands or do quinelles with 2 spoons.
