Soft and chocolatey, reminiscent of a brownie, bake these treats for your loved ones today.
Chocolate Crinkle Cookies
1 cup unsweetened cocoa powder
1 1/2 cups granulated sugar
1/2 cup vegetable oil
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon espresso powder
1/2 teaspoon salt
1 cup confectioners’ sugar for rolling
Beat cocoa, sugar and oil until smooth.
Incorporate eggs one at a time, add vanilla.
In a separate bowl combine flour, baking powder, salt and espresso powder, whisk until combined.
Add dry ingredients to chocolate mixture, mixing until incorporated, careful not to over mix.
Wrap in plastic and chill overnight, or at least 3 hours.
Preheat oven to 350°F, prepare baking sheets with parchment paper.
Sift confectioners’ sugar into a shallow bowl.
Roll dough into 1-inch balls, coat in sugar and place on baking sheet.
Bake 10 to 12 minutes.
