Peanut Butter Cheesecake


Chocolate Graham Crust

1/3 cup butter, melted
1/4 cup brown sugar
1/4 cup unsweetened cocoa powder
1 1/4 cup graham cracker crumbs

Preheat oven to 350 degrees F.
Combine sugar, cocoa and graham crumbs.
Add melted butter and stir to incorporate
Press mixture into 9-inch spring form pan
Bake 8 to 10 minutes, set aside to cool.


24 ounces cream cheese, softened
1/4 cup granulated sugar
14 ounces sweetened condensed milk
1-2/3 cups peanut butter chips, melted
4 eggs
2 teaspoons pure vanilla extract

Beat cream cheese and sugar until fluffy. Add milk gradually then incorporate melted chips.
Beat until smooth.
Add eggs and vanilla, pour mixture over cooled crust.
Bake 60 to 70 minutes or until center is almost set.
Cool at least one hour before removing sides of pan.
Garnish with chocolate glaze and mini peanut butter cups if desired.
